Pesto Stir-Fry with Farmer Sausage and Zucchini

What You’ll Need:
  • 1 Package Drake Meats Farmer Sausage – sliced into rounds about 5mm thick
  • 2 small to medium zucchinis– sliced into rounds about 5mm thick
  • 2 small to medium zucchinis – cut into julienne ribbons or substitute desired pasta
  • 4-6 Cherry/Grape Tomatoes
  • Pesto Sauce – 1 cup of ready-made or homemade
    • 2 cups fresh basil leaves
    • 1/2 cup freshly grated Parmesan
    • 1/2 cup extra virgin olive oil
    • 1/3 cup pine nuts (can sub chopped walnuts)
    • 3 garlic cloves, minced (about 3 teaspoons)
    • 1/4 teaspoon salt
    • 1/8 teaspoon freshly ground black pepper
    • juice from 1 lemon
Directions:
  1. Coat frying pan with oil and place on medium high heat
  2. Add farmer sausage, cook for 3-5 mins
  3. Mix pesto sauce ingredients in mortar and pestle and pulverize until a paste is formed – add salt and pepper to taste
  4. Add pesto mix to pan
  5. Add in zucchini noodle or your desired cooked pasta
  6. Cover and simmer for 5 minutes until zucchini is cooked through out and the sauce is well incorporated
  7. Add the tomatoes and simmer for 1 minute
  8. Take the pan off the heat and allow to stand for 5 minutes
  9. Serve and enjoy!
