Bacon Wrapped Pork Loin

Wrapped or stuffed…why not both? Not only is this tender Pork Loin wrapped in smoky Drake Maple Bacon, it’s also stuffed with Havarti cheese and thin-sliced Salami for an explosion of flavour in every bite!

What You’ll Need:
  • 1 package Drake Maple Bacon
  • 1 3-4 lb pork loin
  • 200 grams thin sliced salami of your choice
  • 1 block Havarti cheese
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp chili powder
  • Salt/pepper to taste

Preparation:
  • Preheat oven to 325°F
  • Start by butterflying your pork loin while maintaining roughly 1/2 inch thickness. Open it up and lay it flat on your cutting board.
  • Combine the paprika, garlic powder and chili powder and sprinkle half of it evenly on the open part of the loin.
  • Layer salami slices evenly on the whole face of the opened loin. Cut your Havarti cheese into long 1/2 inch sticks and lay them end to end at one of the far left or right sides of the pork.
  • Roll the whole thing back up while making sure it stays tight.
  • Take the rest of your paprika mixture and sprinkle it on the outside of the rolled up pork loin. Sprinkle some salt and pepper on the outside of it too.
  • Take the individual strips of bacon and wrap them around the whole pork loin. If needed, use a toothpick to secure the bacon to the loin.
  • Transfer the prepared loin to a non stick baking dish and bake at 325°F for about 30-40 minutes or until it reaches your desired doneness.
